We are delighted to share more details on El Siete, our agave-led cocktail bar quietly taking shape beneath El Pastor Soho. It’s set to open on Saturday 14th March, at which point, we’ll be seeing you for all the after-hours agave-led mischief. We’ve teamed up with Macaulay Sinclair to create something special. Think Mexico City brutalism and modernism, with specific attention to the timeless work of Luis Barragán. The walls are ‘Barragán pink’, with flickering neon bouncing off the chrome and metalwork.
The centrepiece is, obviously, the bar. Which has a terrazzo top, volcanic stone cladding, and leather-trimmed lean bars that encourages real engagement between guest and bartender. As for the seating, it’s low-slung banquettes, poseur stools and vintage marble tables.
Long-time collaborators Giles Looker and Michael Butt of Soulshakers (the minds behind Glastonbury’s San Remo bar) have built us a killer menu.
Structured around the number 7, with seven best-in-class margaritas, seven agave cocktails and seven updated classics.
A taster:
A collection of around 60 mezcals and tequila will span raicilla and capón to cacao-laced pechuga, and El Pastor’s very own batch 005 limited-edition mezcal will make its debut here.
To fuel the night, a short menu of seven mini tostadas made from our house-nixtamalized 100% heirloom corn tortillas and chile de árbol popcorn offer perfect boozy snacking. Highlights include the Fugaz Avocado Tostada with pumpkin seeds and chile de árbol, Yellowfin Tuna with chipotle mayo and Caramelised Banana + Dulce de Leche with Chantilly orange cream.
The music brief is ‘cosmic cantina, carefully considered, with a Latin lean’ and there will be a rotating programme of guest mixes, designed to lift the room at select moments.

Known for his bold, irreverent cooking style, he blends high-level technique with punk energy and global influences. Tiernan has built a cult following for food that’s creative, uncompromising and entirely his own.

A DJ of British Asian heritage with rhythm-driven, dialled-in approach to music selection, honed through international sets and appearances on Rinse FM, NTS and BBC Radio 1.
