If you’re trying to eat a bit better this year, here’s something worth knowing: not all corn is created equal. Our tortillas are made with heirloom Mexican corn, sourced through TAMOA, who work with small-scale farmers that have grown corn for generations. It’s a world away from supermarket corn, chosen for its complex flavours and nutritional properties, rather than yield alone.
Every morning, our tortilleria team nixtamalises the corn using lime water – an ancient technique with modern benefits. It unlocks calcium, makes protein easier for your body to absorb, and releases B vitamins and antioxidants that help deliver steady, feel-good energy.
Most importantly, you can really taste the difference. Tortillas that are earthy, slightly nutty, with perfect stretch and chew.
