New Specials for June at El Pastor

We’ve been working on some exciting new specials ahead of a wider menu update. Executive Chef Berwyn Davies recently spent time in Mexico City, connecting with what modern Mexican chefs are cooking right now and tasting ingredients at their source. These specials are a result of this trip.

TOSTADA DE CAMOTE

Inspired by a dish enjoyed at Contramar, the renowned restaurant by our friend Gabriela Cámara. Sweet potato, gently steamed with oregano, is paired with paprika-roasted peanuts and layered over a spicy habanero mayonnaise. Salsa macha adds depth and warmth, while fresh fennel brings a crisp brightness that balances and complements the dish.

ADOBO MUSHROOMS + QUESO TACO

Chestnut mushrooms are cooked in a rich adobo sauce made with dried chillies, tomatoes, garlic, soy sauce, and a touch of maple syrup for sweetness. Traditionally used as a marinade or the foundation of deeply flavoured sauces, the adobo brings warmth, depth, and complexity to the dish. A crisp tortilla is topped with caramelised cheese and adobo mushrooms, then finished with fresh spring onions and coriander for a bright, aromatic contrast.

BAJA KING PRAWN TACO

Juicy prawns coated in a light, crisp tempura batter, served in a soft wheat tortilla with habanero mayonnaise, for a gentle heat. Topped with a fresh slaw of jalapeño, cucumber, and carrot, lightly seasoned with chilli de árbol, and finished with pico de gallo – balancing sweetness from ripe tomatoes, bright acidity from lime, and fresh herbal notes from coriander.

CHICKEN MILANESE TACO

Our friend Francisco Musi of TAMOA’s favourite taco. Our take features butterflied chicken marinated in chilli de árbol, coated in panko breadcrumbs, and fried until golden and crisp. Topped with a jalapeño and avocado salsa, a touch of sour cream, and finished with matchstick fries for extra texture and crunch. Served on a wheat tortilla, it’s a taco that balances richness, spice, freshness, and crunch.
