Prawns cured with fresh jalapeño, garlic, soy and lime, topped with avocado, tomato and salsa macha mayo on a single large heirloom corn tostada.
Chicken thigh marinated in achiote paste, on heirloom corn tortillas, finished with taquero salsa, onion and coriander.
A skillet of melted cheese, topped with red onion and chorizo. Served with totopos for dipping.
