We’re thrilled to introduce El Siete, our new agave-led cocktail bar, opening beneath El Pastor Soho in March 2026.
El Siete is a nod to El Colmillo, the cult Mexico City nightclub Sam Hart and Crispin Somerville opened in the 1990s at 52 Versalles Street. The number 7 – the sum of that street number – became a playful tribute to the place that first sparked their decade-long immersion in Mexico’s music, design and nightlife.
El Siete represents the next chapter in the El Pastor story: a dedicated space celebrating Mexico’s finest spirits with the same care, warmth, and fun the group is known for.
Seven best-in-class margaritas, seven original agave-based cocktails, seven exceptional versions of the classics, plus a back-bar of enthusiastically collected sipping mezcals. Table service means you can sink into your seat and let the evening flow. No bar queues, no interruptions, just excellent drinks arriving exactly when you want them.
A short bar menu of mini tostadas, made with our house-made heirloom corn tortillas, will be available late into the night. After weeks of tasting and tweaking, we think we may have nailed the perfect Mexican drinking snack with dangerously addictive chile de arbol popcorn.
Slip in through the discreet Brewer Street entrance and descend into a low-lit lounge, complete with a central horseshoe bar and low-slung banquettes around glass-topped cocktail tables.
In keeping with the spirit of El Pastor, El Siete promises a warm, fun, and deliciously bewitching night out in the heart of Soho.
