We’re delighted to announce the next chapter in our EP + Amigos series, bringing Santiago Muñoz Moctezuma of Maizajo to London.
Santiago is the chef-founder of Maizajo, one of Mexico City’s most loved taquerías, drawing huge crowds each night with its iconic tacos served on freshly nixtamalized corn tortillas.
EP co-founder Crispin Somerville first visited Maizajo in 2018 and was struck by a chef who thinks about corn as much as we do. A full team R&D trip followed in 2023, with the whole EP crew falling hard for its fast-paced, casual vibe, its ribeye tacos with shoestring fries, pork belly poc chuc, and lamb flautas. We’ve been plotting this evening ever since.
Maizajo is now a three-in-one concept, combining a mill, taquería and restaurant, where heirloom corn tortillas provide the foundation for everything on the plate. Santiago has spent years exploring native maiz and the art of nixtamalization, treating it as both a technical craft and a cultural practice. His work shows how traditional recipes can evolve without losing their roots.
Expect tacos, tostadas and other maize-based wonders, elevated to star status.
