el siete lives below street level. an agave-led cocktail bar beneath el pastor soho, built around mexico’s most extraordinary spirits.
our love affair with agave runs deep. we’ve spent years in mexican palenques, cantinas, neighbourhood dens and destination bars, tasting, debating and obsessing over mezcal and tequila. what you’ll find behind the pink door is the result of all of that, distilled into one room.
designed by macaulay sinclair – the studio behind hawksmoor, dishoom and permit room – with specific reference to mexico city’s brutalist and modernist traditions. the walls are barragán pink. chrome and metalwork catch the neon. a terrazzo bar top, volcanic stone cladding and leather-trimmed lean bars are designed to close the distance between guest and bartender.
